Almost 85% of Canadian wines are produced in Ontario, mostly on the Niagara Peninsula. Wine-making in this region is made possible by a microclimate that is the result of the moderating influence of lakes Erie and Ontario, the «wind-breaking» role played by the Niagara escarpment and the circular winds that are caused by the water's mass.
Ice wines are the most popular of the peninsula's wines. In fact, the region has surpassed Germany to become the world's main producer of this type of wine. Riesling is at the top of the list of white wines that are produced on the peninsula, followed by white Auxerrois and Gewürstraminer. Among the region's red wines are Merlot and Cabernet Franc.
